Mackerel Stir Fry
Mackerel stir fry happened when I ran out of time between hosting my radio show and getting on a business development call to the States an hour later. It was a case of raiding the fridge, finding a few tasties and throwing them all into a pan. It turned out delicious and was so quick and easy to make. What’s more it was low in fat and high in nutrition. It was just what I needed. As this was a meal for one, I’ve just quadrupled the portion sizes so that you can easily prepare it as a meal for four. I hope you enjoy it.
Mackerel Stir Fry
Serves 4 as a main course
300g smoked mackerel strips
Large knob of butter
2 red onions, chopped lengthways
1 courgette, sliced
2 red peppers, diced
3 cloves garlic, chopped chunky
4 handfuls of button mushrooms, rinsed
4 large handfuls of fresh salad leaves
2 handfuls cherry tomatoes, rinsed and halved
Small handful fresh coriander
1 tbsp balsamic vinegar
Salt and pepper to taste
How to prepare Mackerel Stir Fry
Melt the butter in a large frying pan, then add the onions and garlic. Cover and fry on a medium heat for 5 minutes. Next add the mushrooms and courgette and fry for a further 5 minutes. Add the peppers, peas and cherry tomatoes and cook for another 5 or 10 minutes, until the vegetables are starting to brown.
Flake the mackerel into the pan, douse with the balsamic vinegar and serve up on a bed of fresh salad leaves. Finish with a good serving of black pepper and sea salt to taste.
