Avocado Chocolate Pudding
Avocado chocolate pudding is a recipe I tried out for the Clean Eating group I’m running. Who’d have thought of combining avocado with chocolate? But it’s delicious and super healthy to boot! So you can count this among your clean eating desserts so long as you don’t eat the whole caboodle in one serving!
This is what you’ll need for approximately 2 – 3 servings:
1 ripe avocado, skinned and pitted
Handful of dates (6 – 10)
1/2 tsp vanilla essence
4 generous tbsp dark chocolate cocoa powder
2-3 tbsp unsweetened Greek or soya yoghurt
A few goji berries
Add all the ingredients (except for the goji berries) into a blender. Blend until smooth. Divide between 2 – 3 bowls and scatter the goji berries on top!
