Greek Yoghurt, Oats, Berries and Cacao Nibs

Don’t you just love starting the day off healthily.  I’m making a conscious effort to get back to my healthy ways of eating now that I’m in a new healthy nutrition mindset programme.  And as I’m experimenting with recipes, I thought I may as well include them here too as well as my Facebook page.

I had such a craving for berries and cacao nibs today, so decided to add them to a Greek yoghurt inspired breakfast.  They’ve kept me feeling full for so long too! As I write this it’s nearly 1.30 and I’m still not hungry!

Greek yoghurt, oats, berries and cacao nibs

Individual portion for breakfast bowl

2 tbsp Greek yoghurt

1 tbsp rolled oats

2 tsp chia seeds

Handful of fresh or frozen berries of your choice

1 tbsp cacao nibs

Half a banana

1 tsp almond butter

Mung beans roasted vegetables

How to prepare Greek yoghurt, oats, berries and cacao nibs

In a small bowl combine the Greek yoghurt with the almond butter and oats. Give it a good stir round to mix well.

Next. in a clean bowl, add the Greek yoghurt mixture in a line across the bowl. Slice the banana and place on one side of the Greek yoghurt mix and sprinkle this with cacao nibs.  Sprinkle the chia seeds over the top of the Greek yoghurt mixture and line the berries along the other side.

If you like chili flakes, I often add a few of these to my breakfast yoghurt dish too. They go really well with the other flavours.
