Thai Style Mackerel and Prawns
Thai style mackerel and prawns was the result of a shopping trip when I was starving hungry and hadn’t eaten for over 48 hours, save a small bowl of porridge and a handful of almonds. I was ravenous! And was in serious need of livening up my taste buds while also getting hold of some serious nutrition. Thai style mackerel did just that! It was refreshing, tasty, full of nutrition, low on fat and zero on sugar. What’s more it was quick to prepare.
Thai Style Mackerel and Prawns
Serves 4 as a main course
Large knob of butter
2 red onions, diced
2 cloves garlic, chopped chunky
4 peppered smoked mackerel fillets
300g king prawns, cooked
Handful fresh asparagus spears
4 handfuls cherry tomatoes, rinsed and halved
2 yellow peppers, sliced lengthways
Juice of 1 lime
4 large handfuls of fresh salad leaves
2 tbsp soy sauce
1 handful freshly chopped coriander
Salt and pepper to taste
How to prepare Thai Style Mackerel and Prawns
Melt the butter in a large frying pan. Add the onion and fry on a medium heat for 5 minutes. Next add the garlic, peppers, tomatoes and asparagus and fry on a medium heat for a further 10 minutes.
In the meantime, heap a generous serving of salad leaves into 4 bowls.
Once the vegetables in the frying pan have started to wilt flake the mackerel fillets into the pan followed by the prawns, lime juice, soy sauce and coriander leaves. Combine well and serve on top of the salad leaves.
Finish with sea salt and black pepper to taste.
