Zoodles with Lime Prawns

I had no idea how much I was going to LOVE zoodles! I’m currently in a nutrition mindset program where we help people reach their ideal weight purely by making changes to their mindset, without the need for exercise. As you can well imagine, it’s been hugely popular!

I kept hearing “zoodles” coming up in conversations. What the heck are these things?! They’re zucchini if you live in the US and courgettes in the UK, spiralized to make a much healthier and lower fat spaghetti / noodle alternative …. and they’re DELICIOUS!

I can’t believe I’ve eaten gluey spaghetti for so long when I could have eaten zoodles instead.  I even lost just under a pound in weight from yesterday to today (even though I had two glasses of fizz yesterday too!). Seriously, if you’ve not tried them before you HAVE TO add these to your menu.  They’re super easy to prepare, contain a whole lot of goodness and are way tastier and healthier than pasta.

If you have no idea what a spiralizer looks like, this is the one I bought and I LOVE IT!.

Zoodles with lime prawns

Serves 4 as a main course

4 courgettes / zucchini, spiralized

2 red onions, diced

2 cloves garlic, chopped chunky

A good pinch chili flakes

1 knob butter

Zest and juice of 1 lime

1 tbsp fresh coriander, cilantro, chopped

Mung beans roasted vegetables

How to prepare Zoodles with Lime Prawns

Melt the butter in a large frying pan.

Add the onions and mushrooms and fry on a medium heat for 10 minutes. Next add the prawns, zoodles, chili flakes, coriander and lime juice and fry for a further 5 minutes, tossing regularly to make sure everything is cooked through well.

Divide into 4 and serve heaped into a bowl.
